METHOD FOR SCREENING BAKER'S YEAST

PURPOSE:To provide a method for screening cold storage and/or freezer storage- resistant yeast. CONSTITUTION:This method for screening cold storage and/or freezer storage- resistant yeast comprises (a) a process for varying yeast, (b) a process for culturing the varied yeast in a saccharide analog-containing medium, (c) a process for selecting the yeast growing in the saccharide analog-containing medium at 10 deg.C and (d) a process for screening the yeast having <=10ml high saccharide dough fermentation power at 5 deg.C, >=350ml high saccharide dough fermentation power at 30 deg.C and fermentation power at 30 deg.C at return temperature of >=80% the high saccharide dough fermentation power at 30 deg.C.
