The enclosure has a housing (1) to receive a heat insulated cryogenic cold reserve (3), and a heat exchanger (6) with a heat exchange surface off-set with respect to the housing. The exchanger transfers cold energy from the reserve towards the perishable products. A leak valve (5), heat conducting units (8), air-gap device (9) and a temperature sensor (10) permit to send, on request, a cryogenic liquid towards the off-set surface. The heat exchange surface of heat exchanger exchanges heat between the heat insulated cryogenic cold reserve and a product loading compartment (2). An independent claim is also included for a method for controlling and regulating the temperature in a perishable product e.g. food product, preserving and transporting enclosure.
