PROBLEM TO BE SOLVED: To provide a manufacturing method of anα-hydroxycarboxylic acid useful as a raw material of pharmaceuticals and agrochemicals, liquid crystal materials and optical resolution agents. SOLUTION: The crystal of theα-hydroxycarboxylic acid with a high chemical purity can be manufactured in a high yield by adding a strong acid to an aqueous solution of an alkaliα-hydroxycarboxylate thereby to adjust the pH thereof to 1.0-3.0 and causing theα-hydroxycarboxylic acid to crystallize from the aqueous solution.
