PURPOSE: Provided is dried shellfish meat containing medicinal herbs, which can be kept fresh by drying, can be preserved for a long term without boiling or adding a preservative and is excellent in taste and flavor. CONSTITUTION: The dried shellfish meat containing medicinal herbs is prepared by: i) boiling ginger 1-2kg with water 15-20L at 80-100deg.C for 1-2hrs, soaking shellfish meat 10kg into the boiled ginger liquid 10-12L and picking up the shellfish meat; ii) mixing the shellfish meat 50-85wt% with Foeniculi Fructus 2-8wt%, Clove 2-8wt%, cinnamon 3-10wt%, dried orange peel 3-10wt% and Zanthoxyli Fructus 2-4wt%; and iii) stirring the mixture with Japanese apricot wine 3-10wt% having a degree of purity being 20-30 and drying the stirred material. |
