PROBLEM TO BE SOLVED: To obtain an oil and fat composition prevented from bubbling in fry cooking, excellent in cooking workability, having a long life in fry cooking and useful as general-purpose cooking oil by making the composition include a triglyceride as a principal ingredient, a specific polyhydric alcohol and a specific fatty acid monoester in a specific content ratio. SOLUTION: This oil and fat composition is prepared by including a triglyceride as a principal ingredient, at least one of polyhydric alcohols consisting of glycerin and diglycerol, and 0.2-20 wt.% (preferably 2-8 wt.%) monoester of a fatty acid (preferably a 6-22C linear (un)saturated fatty acid), (e.g. diglycerol monocaprylate or the like). The monoester preferably is prepared by steam distillation under reduced pressure at a temp. of >=140 deg.C and preferably has an acid number of <=0.2. Rape-seed oil or the like is used as a glyceride mainly comprising the triglyceride. |
