PROBLEM TO BE SOLVED: To provide a cheese starter usable for producing cheese which has highγaminobutyric acid (GABA) content and high lactic acid content, and is excellent in flavor. SOLUTION: This cheese starter contains 3 strains including Lactococcuslactis subsp.lactis biovar diacetylactis strain NIAI01-7, Lactococcuslactis subsp.lactis strain NIAI 527, and Lactococcuslactis subsp.cremoris strain NIAI 01-1.
