The invention relates to a method for producing a foodstuff with plant protein, especially wheat albumen, and to a food product so produced. The invention seeks to facilitate processability of a hydrated plant protein and the production a homogeneous mixture with ingredients. For this purpose, said method comprises the following steps: mixing the plant protein with water in a mixing device until partial or complete hydration to form an intermediate product; freezing the intermediate product D in a freezing apparatus to form a frozen intermediate product; grinding the frozen intermediate product in a grinding apparatus until production of a gross to fine ground intermediate product; working the gross to fine ground intermediate product in a partially to fully frozen state to form a mixture and/or a finished product. |
