The invention relates to foaming compositions and emulsions containing a polymer comprising water-soluble units and LCST units, particularly for cosmetic applications. According to the invention, a polymer is used wherein the LCST units have a demixing temperature in water of between 5 and 40 DEG C for a mass concentration of 1 %, in order to lower the surface or interfacial tension of the water and encourage the production of foam or emulsion.
