The allyl esters obtaining method involves mixing alkyl carboxylic acid of natural or synthetic origin, or its derivative selected from acetic acid, acyl halide, ester, amide, substituted amide or activated acid, an initiator of reaction, and aliphatic polyol or, alternatively, alpha,gamma-dihaloalcohol or beta,gamma-dihaloalcohol to obtain corresponding ester or mixture of both. The ester compound is subsequently reacted with neutral salt of metal iodide or quaternary ammonium iodide at proper temperature, to obtain the corresponding allyl ester, isolated through a process of purification.
