<P>PROBLEM TO BE SOLVED: To provide a transparent food material made by including a stuffing material in the inside of a transparent albumen food material which is obtained, by making at least one kind selected from among casein and phosvitin in a material derived from albumen contained, and keeps transparent even after heating, and preventing the transparent albumen food material from becoming cloudy by oozing of salt/acid/enzyme from the stuffing food material, after heating. <P>SOLUTION: This transparent food material includes a transparent albumen food material 2, obtained by making at least one kind selected from among casein and phosvitin contained in a material derived from albumen and keeps transparent, even after heating, and a stuffing food material 3 which is included in the inside of the transparent albumen food material.
