<p>A machine to tenderise meat by performing crosscuts in it is fitted with two tool rolls, one with radial blades parallel to its axis of rotation and the other with serrated radial disc plates. Each roll is faced by a back-up roll with a corrugated surface. The two tool rolls are revolved in the same direction; the two back-up rolls are also revolved in the same direction, opposite to that of the tool rolls. This machine can process lumps of meat of any size or shape. It provides a simple quick and reliable way of performing the cruciform incisions.</p> |
