The drawing-off of beer under a gas pressure from a bottle (11) of CO2 (90%)/N2 (10%) mixture is carried out with undercooling of the beer in the transfer pipe (41) upon leaving the barrel (2), thereby preventing any desorption. Furthermore, a pressure regulator (14) is provided which regulates the pressure applied to a barrel (2) as a function of ambient temperature, so as to ensure, permanently, an optimum dissolved-CO2 content. <IMAGE>
