Soft ice, specially for domestic consumption, is manufactured by freezing the mix and enclosing it gas-tight in the appliance where an excess gas pressure is applied. The frozen mix is then briefly liquefied, while at the excess pressure, either by a scraping operation through the applied cutting pressure and/or heat and instantly refrozen, or it is crushed and mixed. The soft ice is then ready for consumption. When the same constituents are used, this method and this appliance ensure the production of soft ice of uniform good quality.
