PROBLEM TO BE SOLVED: To obtain a composition having excellent long-term preservation stability and useful in foods and the like, by including a powdery substance and powdery oil-and-fat of specified mesh so as to suppress hygroscopicity of the powdery substance and/or its reactivity with an alkaline component and be remarkably prevented from caking and/or deliquescence. SOLUTION: This powdery substance-containing composition is obtained by including at least one powdery substance selected from the group consisting of organic acid or inorganic acid salts, hydrates thereof, amino acids and inorganic salts and comprising sodium acid metaphosphte, polylysine or the like, and >=200-mesh, preferably >=300-mesh, more preferably >=350-mesh powdery oil-and-fat comprising a higher fatty acid, sucrose fatty acid ester or the like; wherein it is desirable to formulate 3 to 10 pts.wt. of a >=200-mesh powdery oil-and-fat in 100 pts.wt. of the powdery substance to prevent the caking or deliquescence of the composition containing the powdery substance. |
