PROBLEM TO BE SOLVED: To measure the chromaticity of the yolk in a nondestructive manner. SOLUTION: When the chromaticity of the yolk is measured, an egg E is irradiated with a light having a known wavelength to calculate, not only the transmissivity (intensity of transmitted light/intensity of light of light source)α<SB>575</SB>of the light, having a peak in the vicinity of a wavelength of 575 nm transmitted through the egg E and calculate the transmissivity of light (the intensity of transmitted light/intensity of light source)β<SB>590</SB>, having a peak in the vicinity of the wavelength 590nm, but also the ratioγ(α<SB>575</SB>/β<SB>590</SB>) of transmissivity, calculated by dividing the transmissivityα<SB>575</SB>by the transmissivityβ<SB>590</SB>.
