DISCLOSED IS A POWDER LIPASE PREPARATION WHICH DOES NOT REQUIRE AN IMMOBILIZATION CARRIER THAT HAS BEEN CONVENTIONALLY NECESSARY FOR A LIPASE PREPARATION, AND EXHIBITS A HIGHLY ACTIVE TRANSESTERIFICATION ACTIVITY IN THE FORM OF POWDER. SPECIFICALLY DISCLOSED IS AN EMULSIFIED POWDER LIPASE PREPARATION WHICH IS OBTAINED BY MIXING AN OIL-IN-WATER EMULSION, WHICH IS PREPARED FROM A POLYSACCHARIDE HAVING AN EMULSIFYING FUNCTION AND A FAT OR OIL, WITH AN ENZYME HAVING A LIPASE ACTIVITY, AND THEN DRYING THE RESULTING MIXTURE. THE EMULSIFIED POWDER LIPASE PREPARATION EXHIBITS A GOOD TRANSESTERIFICATION ACTIVITY WITHOUT REQUIRING AN IMMOBILIZATION PROCESS THAT HAS BEEN CONVENTIONALLY REQUIRED. PREFERABLY, THE POLYSACCHARIDE HAVING AN EMULSIFYING FUNCTION IS COMPOSED OF A WATER-SOLUBLE SOYBEAN POLYSACCHARIDE, AND THE LIPASE ACTIVITY ACTS SPECIFICALLY ON THE 1- OR 3-POSITION OF TRIGLYCERIDE. |
