DIACYLGLYCEROL ACYLTRANSFERASE GENE, PROTEIN AND METHOD FOR USING THEM

PROBLEM TO BE SOLVED: To provide diacylglycerol acyltransferase genes and proteins, and to provide methods for their use.

SOLUTION: The genes and proteins that exhibit both long-chain acyltransferase and acyltransferase activity are provided, and both native and recombinant wild-type forms of the transferase, as well as mutants and variant forms (some of which possess altered characteristics in comparison with the wild-type transferase) are included in this invention. The methods for using the diacylglycerol acyltransferase genes and proteins are also provided, which include their expression in transgenic organisms and the production of acetyl-glycerides in plant oils (especially in plant seed oils).
