PURPOSE:To obtain indigestible dextrin sufficiently usable as dietary fiber by dissolving roasted dextrin in water, affecting alpha-amylase to the resultant solution and affecting trans-glucosidase. CONSTITUTION:An aqueous solution of mineral acid, preferably hydrochloric acid, is added to a raw material starch, preparatorily dried and roasted to obtain a roasted dextrin. Next, said roasted dextrin is dissolved in water, then alpha-amylase is added and affected to make proceed decomposition of said dextrin to alpha-limited dextrin. Then, trans-glucosidase is affected to said dextrin in the coexistence of beta-amylase, as necessary, to afford the aimed dextrin eliminating irritant odor or unpleasant degustation and restoring or further improving indigestibility. |
