PROBLEM TO BE SOLVED: To obtain a quality modifier inhibiting aging by spray coating pregelatinized noodles such as boiled noodles, steamed noodles, etc., to improve loosening of the noodles using an oil and fat containing diglycerin monoester of a fatty acid as an effective ingredient. SOLUTION: This quality modifier of noodles contains animal and vegetable oil and fat such as soy bean oil, rape-seed oil, cotton seed oil, palm oil, sesame oil, rice oil, safflower oil, coconut oil, corn oil, palm-core oil, fish oil, beef fat, milk fat, etc., and their hardened oil, fractionated oil, ester interchanged oil, etc., containing >=0.1wt.% diglycerin monoester of an 8-24C fatty acid, preferably a 16-22C fatty acid. |
