PROBLEM TO BE SOLVED: To obtain rice by adding a specific modifier such as cystine, etc., to raw rice, etc., having no smell of hydrogen sulfide immediately after boiling rice, improved flavor, also emitting no smell of hydrogen sulfide when boiled rice returned to a room temperature or frozen after boiling is reheated by a microwave oven, etc. SOLUTION: This raw rice or processed rice contains at least one improver selected from 0.01-1wt.%, preferably 0.1-0.5wt.% of cystine or cysteine hydrochloride and 10-1,000ppm, preferably 100-500ppm of a sulfite, a hydrogensulfite or sodium hydrogenhyposulfite. |
