PROBLEM TO BE SOLVED: To obtain salted salmon roe homogeneously containing the salt in a low concentration, free from a drip and capable of being easily eaten by immersing salmon ovaries loosed into small pieces having each a mouthful or meal size in saturated salt water and subsequently ageing the loosed ovaries. SOLUTION: The method for producing the salted salmon roe comprises immersing salmon ovaries 1 loosed into small pieces having each a mouthful or meal size in saturated salt water (5-15 deg.C) for 5-20min, flatly arranging the treated salmon ovary pieces in a container 2, laminating the arranged salmon ovary pieces in plural stages through vinylic resin sheets 3 having many holes, and subsequently ageing the laminated salmon ovary pieces at 5-20 deg.C for approximately 2-6 days for seasoning the salmon ovary pieces. When the produced salted salmon roe is pulled out together with the vinylic resin sheet, the salted salmon roe can be easily taken out without damaging the salted salmon roe. |
