<p>PROBLEM TO BE SOLVED: To obtain such new antimicrobial pickles as to be capable of inhibiting the microbial proliferation of the whole prepared box lunch incorporated therewith over 48 h or longer after put into the box lunch. SOLUTION: The new antimicrobial pickles are obtained by impregnating pickles, small-sized plums, sesame, or the like, with 1-10μg allyl isothiocyanate.</p> |
