<P>PROBLEM TO BE SOLVED: To provide a pungency-enhancing method: to provide a pungency-enhancing agent and food and drink enhanced in pungency: and to provide a method for producing the agent and the food and drink. <P>SOLUTION: The pungency-enhancing method comprises adding an amino-calbonyl reactant between a peptide and a calbonyl compound, specifically the amino-calbonyl reactant between the calbonyl compound and the peptide having a molecular amount of 1,000-20,000, preferably 1,000-10,000, further preferably 1,000-5,000, to food and drink containing a pungent component.
