METHOD FOR MANUFACTURING MANNITOL USING CANDIDA MAGNOLIAE

PURPOSE: Provided is a method for manufacturing mannitol using Candida magnoliae(KCCM-10252) in a high yield which is used as an effective sweetener instead of sugar and an intermediate of substances for treating hypotension. CONSTITUTION: The method for manufacturing mannitol using Candida magnoliae(KCCM-10252) in a high yield is characterized by the following steps of: i) seed-culturing the microorganism in YPD medium having 15-25g/L of glucose, 7-13g/L of yeast extracts, and 15-25g/L of peptone; and ii) cultivating the microorganism in medium containing 50-100g/L of glucose, 50-120g/L of fructose, 5-20g/L of yeast extracts, 1-5g/L of ammonium sulfate, 1.0-5.0g/L of potassium phosphate dibasic, and 0.1-0.5g/L of magnesium sulfate at 27-35 deg.C at pH 4.5-5.5 at the speed of 200-500rpm with the aeration amount of 0-0.5vvm.
