摘要 Disclosed is a soy protein product having a protein content of at least 60 wt% (N x 6.25) d.b. with a pH of 6 and which has a non-beany flavour, the soy protein product being substantially insoluble in water over a pH range of 2 to 7. Also disclosed is a method of producing said soy protein product which includes: - providing an aqueous solution of a soy protein product having a protein content of at least 60 wt% (N x 6.25) d.b. which is completely soluble in aqueous media at a pH of less than 4.4 and heat stable at that pH range, - heat treating the pH-adjusted solution and then drying the resulting product or - heat treating the pH-adjusted solution then recovering and drying the precipitated material.
