The previous procedure for producing cocoa powder agglomerates is not only cost-intensive, but is also associated with considerable risks because of possible dust explosions. Furthermore, the cocoa beans are polluted with very high bacterial counts. It is therefore the object of the invention to further develop the process of the type mentioned in such a way that not only are considerable energy and cost savings achieved as well as removal of the risk of dust explosions, but also a reduction of the bacterial counts is achieved. This object is achieved by the previously broken up cocoa press cake being fed directly to an extruder which, in a first section, disagglomerates the cocoa press cake by shear with addition of water or steam between 1 and 20 % by weight, based on the solids portion and in a following section dries the disagglomerated particles by vacuum degassing and then reagglomerates them by mixing with simultaneous cooling.
