PURPOSE:To obtain a calcium-enriched egg oil prevented in deterioration of the quality, e.g. prevented from browning of egg york and suppressed in increase of acid value of egg oil by adding a definite amount of calcium hydroxide the a process for extracting egg oil from egg york. CONSTITUTION:When hen's egg is steam-boiled and broken and then egg york is pulverized and egg oil is extracted by a solvent such as ethanol, a definite amount of calcium hydroxide is added thereto and isolated phosphoric acid is subjected to deacidification treatment to provide the objective egg oil. |
