PROBLEM TO BE SOLVED: To provide a method and apparatus for drying organic matters of high water content wherein unevenness of the organic matters of high water content can be eliminated by maximally uniformizing both the velocity and temperature of warm air in contact with the organic matters, and thereby, the product quality can be improved and also effective utilization of the thermal energy can be accomplished through improving thermal efficiency. SOLUTION: This method for drying organic matters of high water content comprises bringing warm air into contact with an organic matter of high water content 43 placed in a drying chamber 12 to dry the organic matter 43 under heating; wherein the warm air is sucked from one side of the drying chamber 12 and the sucked warm air is taken into the chamber from the other side thereof, and the warm air is brought into contact with the organic matter 43 at a Reynolds number of <=2,200.
