PROBLEM TO BE SOLVED: To provide freeze-dried miso soup having effective flavor of dried and fermented fish by suppressing denaturation/deterioration of dried and fermented fish, and a method for producing the same.SOLUTION: A method for producing freeze-dried miso soup includes:(a) a step of heating and preparing a soup base containing at least miso and water:(b) a step of filling an individual container with powder dried and fermented fish;(c) a step of injecting the heated and prepared soup base into the individual container; and (d) a step of freeze-drying the food materials together with each of the individual containers. Since the method includes heating and preparing the soup base containing at least miso and water followed by bringing the powder dried and fermented fish into contact with the soup base for the first time in the individual container, heating of the dried and fermented fish during the production step is limited to minimum while using the powder dried and fermented fish which is easily enhanced in flavor, and flavor of the dried and fermented fish is further effectively enhanced by pouring hot water when restoring.SELECTED DRAWING: None |
