The invention concerns an apparatus for retailing fizzy drinks, in particular beer, the drink container being held under pressure using CO2 gas fed from a gas supply. When the drink-drawing tap is closed, pressure equilibrium is established in the drink container between the CO2 above the surface of the drink and the CO2 dissolved in the drink. When the drawing tap is opened, drink is forced by the pressure of the CO2 towards the tap. CO2 dissolved in the drink comes out of solution owing to the decrease in pressure produced by the opening of the tap and causes the fizzy drink, in particular beer, emerging from the tap to foam. During long pauses between drawing drinks, the pressure of the CO2 in the drink container is adjusted to a lower value. |
