The knife comprises a blade and a handle and the tongue (3) joined to the blade (2) and the grip portion of the handle (4) are permanently secured to each other by complementary hock portions. The tongue can have a recess (5) for a mating protrusion on the handle, both of rectangular shape, the longer sides running in the lengthwise direction of the knife. The recess can be open at the end furthest from the blade. Alternatively the recess can be open towards the bottom, the tongue extending beyond the rear end of the handle. The tongue can have two arms spaced apart (6).
