PROBLEM TO BE SOLVED: To provide a method and apparatus for evaluating an emulsion, capable of readily comprehending the deterioration phenomenon of the emulsion, such as ultra-heavy oil emulsified fuel or various emulsion fluids of a heating medium, an emulsifier or the like for a short time and on a real-time basis and capable of estimating the deterioration phenomenon of the emulsion such as ultra-heavy oil emulsified fuel or the like in various equipments, such as a steam power plant or the like. SOLUTION: In the method for evaluating the emulsion as a change in the physical properties of the emulsion with the elapse of time, the emulsion is stirred while a shearing force is applied to the emulsion, and thereafter, the physical properties of the emulsion are measured and a degree of the change in the physical properties of the emulsion with the elapse of time is evaluated.
