<p>According to the method, a piece of meat is cleaned with a strongly alcoholic drinkable liquid before salting for preservation purposes. After salting, the surface of the meat is cleared of grains of salt and washed with a flavoured drinkable liquid, then coated, before said liquid evaporates, with a protective layer of various spices. The method can be used for processing pieces of beef such as silversides, topsides and others.</p> |
