PROBLEM TO BE SOLVED: To form a chazuke having a good taste and a high grade appearance by adding sliced raw fish to a chazuke, and to provide the sliced raw fish capable of being stored for a long period by freezing sliced raw fish under vacuum. SOLUTION: This sliced raw fish for chazuke is prepared by cutting a fresh fish into three fillets, pouring hot water on the outer skins of the fillets, quickly cooling the fillets in ice water, scattering salt on the cooled fillets, putting a weight on the treated fillets, storing the fillets in a refrigerator for three days, washing the fillets with water, immersing the washed fillets in a soup, again storing the fillets in the refrigerator in the state for two days, cutting the treated fillets in a prescribed size, arranging the cut fish pieces on tangle, packing the combination under vacuum and subsequently quickly freezing the packed fish. |
