A chitosan-coating agent containing a plasticizer for the preservation of egg quality is provided to preserve eggs effectively and to lengthen a preservation period. A chitosan-coating agent comprises a chitosan solution, in which 2w/v% chitosan is dissolved in 1% acetic acid, and 2w/v% plasticizer. The plasticizer is one material selected from the group consisting of glycerol, propylene glycol, sorbitol and their mixture. The chitosan represents white acid-soluble chitosan(Mw=282kDa) obtained from a leg shell of a crab. The chitosan-coating agent is sprayed or brushed. Preferably, the chitosan-coating agent is coated by a brush and dried by a fan. |
