摘要 PURPOSE: A kimchi fermentation indicator is provided to allow consumers to easily perceive the fermentation state of kimchi through the change of color of the fermentation indicator. CONSTITUTION: A kimchi fermentation indicator is obtained by a first step of extracting a water soluble natural color or dye from the vegetables containing anthocyanin family color or dye; a second step of pouring k-Carrageenan into the distilled water which is heated to 80 Deg.C, adding the natural color or dye at a predetermined concentration, and mixing the resultant structure at 6000rpm for 1 minute; a third step of heating the indicator solution obtained in the second step, at a hot plate until the temperature of the solution has reached 90 Deg.C; and a fourth step of pouring the indicator solution at gel state into a mold, and solidifying the indicator solution at a room temperature for 20 minutes.
