<p>PROBLEM TO BE SOLVED: To obtain alcoholic drinks preventing oxidation, having the refreshing bitter and sourness, being given mild sense of drinking, excellent in the function and useful for prevention against active oxygen-caused diseases such as arteriosclerosis, cancer, etc., by including gallic acid. SOLUTION: The drinks comprises gallic acid (pref. in a content of >=200 ppm), which is at least one kind selected from the group consisting of (A) a heat-treated product of persimmon juice and/or tannic acid-reinforced persimmon juice, (B) a tannase-treated product of persimmon juice and/or tannic acid- reinforced persimmon juice, (C) a heat-treated product of tannins and/or tannic acid-reinforced tannins and (D) a tannase-treated product of tannins and/or tannic acid-reinforced tannins all derived from gallic acid resources usable in the manufacturing process of alcoholic drinks. Preferably, the alcoholic drinks are Japanese sake, white distilled liquor, sweet sake for seasoning, synthetic sake, vin rouge or miscellaneous liquors and a dregs-precipitating agent for brewing is prepared by including gallic acid obtained by enzymatically, physically and/or chemically treating the gallic acid resources.</p> |
