PROBLEM TO BE SOLVED: To provide a fish processed food masking fishy smell of fish without removing the skin and the red muscle thereof, and to provide a method for producing the fish processed food. SOLUTION: This method for producing a fish processed food is characterized by comprising a process of doing in an arbitrary order each step of bringing fish with skin to chips and of boiling well or steaming the fish, and a process of heating and drying the fish subjected to the former process in a seasoning liquid containing Chinese rice wine. The fish processed food with skin decreased in fishy smell of fish is obtained by the method. |
