Novelty: sour tarhana prepared with 50% of ass milk kefir and 50% of goat milk kefir is disclosed. Ingredients for the preparation of 10 kilos of ready product: 7 kilos of semolina, 3 kilos of flour, 20 eggs, 100gr of salt, 1,5 lit of ass milk kefir, 1,5 lit of goat milk kefir. Preparation mode: mixing of the aforementioned ingredients into a kneading device until homogenization; placement of the mixture in the cutting device transforming dough into tarhana grains ready to be placed onto the special shelves of a drying chamber for 48 hours. Use and properties of the final product: the thus-produced tarhana can be cooked into saucepan or oven while preserving all the nourishing, beneficial and therapeutic properties offered by the ass and goat milk kefir to the human organism. |
