PROBLEM TO BE SOLVED: To obtain plastic oils and fats with which a health function is in creased in the field of plastic oils and fats for producing margarine an shorten ing and which can be produced by formulation of a fish oil containing PUFA(polyunsaturated fatty acid) and vegetable oils and fats without using animal oils and fats and hydrogenated oils and fats. SOLUTION: The plastic oils and fats comprise a stearin fraction (fish oil stearin) obtained by fractionation of a fish oil as a main raw material, preferably are formulated with vegetable oils and fats, contains PUFA, are composed only of natural oils and fats and good for the health.
