Sugar manufacture evaporator process tank has a mixer unit driving the flow of liquid horizontally over heat exchanger, enhancing efficiency with lower cost. A continually operated evaporation crystallisation assembly is employed in the production of sugar solution (magma). The unit has a continual supply of juice which is continually heated and agitated. The assembly is an enclosed, evacuated container with an upper vapour zone over a juice chamber with heat exchanger. The lower chamber also has a juice inlet, a crystal outlet, a heat exchanger steam heat inlet and a rotary mixer assembly which drives the juice through the heat exchanger. The rotary mixer is a roller drives the fluid horizontally over the heat exchanger surface. The mixer operates in the same way as a cross-flow ventilator, though with fewer paddles at its periphery. The mixer is preceded by an outlet diffusion unit which encompasses at least half the mixer circumference.
