PROBLEM TO BE SOLVED: To provide an apparatus for producing frozen dessert where a high-temperature refrigerant flows into a cooler while bypassing a condenser and a decompression device to eliminate temperature rise in a compressor when performing heat sterilization. SOLUTION: The apparatus for producing frozen dessert is provided with a hopper cooler 4 and a cylinder cooler 11 cooling a hopper and a cooling cylinder respectively, and a cooling device equipped with a refrigerant circuit comprising a compressor 18, a condenser 20, the decompression device, the hopper cooler, the cylinder cooler and the like. The apparatus is provided with a hot gas pipe 40 bypassing the condenser and the decompression device so that the high-temperature refrigerant discharged out of the compressor is supplied to each of the coolers via the hot gas pipe to subject the mix to heat sterilization and the refrigerant discharged out of each of the coolers is sucked to the compressor.
