PURPOSE: To inhibit and prevent pathogenic bacterial growth such as Listeria monocytogenes, etc., without damaging the characteristic of meat by mixing an encapsulated product containing acetic acid to a meat product mixture before cooking. CONSTITUTION: An encapsulated product in a granular form consisting of a capsule (preferably, 1 to 5000μ average diameter) containing acetic acid in an edible lipid in the ratio of acid and edible lipid being 40 to 80:100 is mixed to a meat product mixture such as a sausage, a ham, a bacon before cooking to suppress the growth of bacteria in a chilled heated meat product. In addition it is preferable to mix <=60 wt.% citric acid with acetic acid. |
