PURPOSE: A composition for kimchi in which capelin liquid pickled sea food is added is provided to improve color, taste, and texture of the kimchi with the aged capelin liquid pickled sea food by adding and aging garlic, ginger, and dried pepper, etc. CONSTITUTION: A composition for kimchi includes capelin liquid pickled sea food. A manufacturing method of the capelin liquid pickled sea food includes a step for mixing Capelin and salt to the weight ratio of 7:3, and a step for aging the Capelin. The capelin liquid pickled sea food is mixed with seasoning including garlic, glutinous rice, onion etc after an aging process. The amount of the capelin liquid pickled sea food is 1.8-2.5% based on the total weight of the Kimchi seasoning composition. |
