<p>PROBLEM TO BE SOLVED: To provide a seed koji of a high enzyme titer made from seeds as a raw material, and to provide a method for producing wines/foods using the same. SOLUTION: This method for producing the seed koji comprises cutting the seeds into pieces which are then heat-treated (e.g. roasted and/or steam- dried) and then put to koji-making process. The 2nd objective seed koji obtained by the above method. The other objective method for producing wines/foods using the above seed koji is provided. By the above method, the objective seed koji with high enzyme titer such as forα-amylase or acid protease, suitable for brewing, can be obtained; and a method for producing wines/foods with favorable characteristic flavor peculiar to the seeds can also be provided.</p> |
