摘要 PROBLEM TO BE SOLVED: To provide a cookie production composition having moist and soft texture during best before date and having high moisture retention, and a production method of cookie using the same composition.SOLUTION: The cookie production composition comprises wheat flour, grease and sugar, with respect to 100 mass parts of the cookie production composition, 0.5-20 mass parts of poly glycitol syrup or a mixture of 0.5-5 mass parts of glycerin and 1-10 mass parts of the poly glycitol syrup is contained. The composition is kneaded, and a wire cut or co-extruder is used in the cookie production method. After the grease and sugar is mixed and emulsified, glycerin, poly glycitol syrup or a mixture of them is added thereto, before adding a liquid-state raw material.SELECTED DRAWING: Figure 1
