PURPOSE: Provided is a process of preparing noodle with black soy containing mixed sea foods by preparing sauce using fishes and seaweeds as a main material and then adding the obtained sauce to noodles. Whereby, the noodles have no oily odor and flavor because it uses no meat and animal oil and are excellent in nutrient and taste. CONSTITUTION: A mixture of 63 to 74% by weight of wheat flour, 18 to 24% by weight of activated water, 1 to 2% by weight of sodium carbonate, 3 to 5% by weight of peanut powder and 4 to 6% by weight of bean flour is kneaded with water and extruded to produce noodle strings. Kelp, Salicornia herbacea, immature Alaska pollack and Chromis notata are mixed in a ratio of 1:1:2:3, heated with onion, radish and green onion and aged with vinegar to produce meat juice. An octopus and cuttlefish are roasted with edible oil, mixed with vegetables, heated with 70 to 80% by weight of black bean paste and then mixed with 40 to 45% by weight of the meat juice, 15 to 20% by weight of activated water, 5 to 10% by weight of starch, 10 to 15% by weight of soybeans and 10 to 15% by weight of lotus roots to produce sauce. |
