PROBLEM TO BE SOLVED: To produce flour of germinated unpolished rice having excellent viscoelasticity, viscosity, taste, processability, water-retention and safety, and provide a processed food produced from the flour. SOLUTION: The germinated unpolished rice flour is produced by using germinated unpolished rice dried after wet-heat treatment. The germinated unpolished rice flour of the present invention has a water content of 5-10%, a gelatinization degree of 10-60% and a general viable cell count of <=1,000 CFU/g and excellent viscosity and viscoelasticity and, accordingly, it can be used as the raw material for even a processed food having extremely high elasticity such as bread, cake and noodle as well as dumpling and rice cake. It has excellent taste, processability, water-retention and safety. |
