The invention relates to an improved method for finding and selecting mixtures of peptides suitable for stabilising or destabilising emulsions, as appropriate. The method includes a first step of computational simulation to generate a database of possible molecules, a laboratory test to evaluate parameters of interest in each of the molecules, the tabulation of the molecules in lists ordered according to each of the measured parameters, the systematic mixing of the molecules following the order of the lists, the variation of the proportions in each mixture, and the evaluation of the stability and drop size of the generated mixtures in order to select the best mixture for the specific application.
