摘要 PROBLEM TO BE SOLVED: To provide a method for producing a soybean product, by which isoflavone can easily be changed into the form of aglycone to increase the content of the isoflavone aglycone in the soybean product as much as possible in the production process. SOLUTION: This method for producing the soybean curd as a soybean product is characterized by comprising (1-1) a washing process for washing soybeans as a raw material with water, (1-2) a soaking process for soaking the washed soybeans with water or hot water, (1-3) a raw soaked-ground soybeans-producing process for subjecting the soybeans to a comminuting treatment such as a grinding treatment to prepare the 'soaked-ground soybeans', (1-4) a magnetic field treatment process for applying a magnetic field to the soaked-ground soybeans, (1-5) a separation process for filtering the raw soaked- ground soybeans to separate the soybean milk from the soybean refuses, (1-6) an ingredient-adjusting process for adjusting the ingredients of the soybean milk, (1-7) a thermally treating process for thermally treating the soybean milk, and (1-8) a coagulating process for adding a coagulating agent such as bittern to the thermally treated soybean milk to coagulate the soybean milk.
